ABOUT CHEFS TARA AND PJ HEAD

PJ Head and Tara Flinn met on Tara’s 30th birthday and they formed an instant friendship. PJ had been attending the Culinary Institute Lenotre and Tara was working in restaurants. Years later, they would come together and realize they each had a passion for food and cooking, and more so, a love of watching people eat their food. The couple were married and after a few years of cooking in BBQ cook offs and competitions, they decided to try their hand at owning and operating a BBQ food truck. During Covid, PJ and Tara joined with Del Papa and gave away a lunch and a beer to any service industry worker that was in need. The community helped their business stay alive and eventually they were able to open their own brick and mortar restaurant in beautiful Galveston Texas named Koop’s BBQ Kitchen. The Head’s own a “mom & pop” restaurant specializing in Texas Barbecue and homestyle comfort food. They believe in good eating and good ol’ fashioned southern hospitality.

ABOUT THE 1871 FREDERICK AND MINNA MARTINI COTTAGE

This elevated one-story cottage with centered one-bay-wide porch and double dormers is one of the best examples of the Gulf Coast cottage form commonly seen in Galveston. Situated on two full lots, bookkeeper Frederick Martini and his wife, Minna, built the house and maintained the family residence there until 1913. The building retains original details that include shuttered six-over-six windows and a simple but elegant entry framed by sidelights and transom.
